Our Gin

WilkinsonEnglish. When considering joining in with the Gin revolution we decided that if we are to be Distillers we “will” be Distillers. We applied for our licence in July 2012 and after a great deal of form filling and fantastic help and understanding from the staff at HMRC we were eventually granted our licence in December 2014. A compounder’s or rectifier’s licence would have allowed us to buy our spirit from Scotland but we opted to “travel” the full journey. We begin with Maris Otter Pale Malt and brew a mash beer which takes 6 to 7 days to reach up to 14%abv. This, after three distillations along with carefully chosen botanicals and special blending, becomes our WilkinsonEnglish Gin. The same plant and equipment is used for our Spiced Rum and Single Malt Spirit.(Not Whisky as it is only in an Oak Barrel for three months). Whichever of our Darlington Distilled Spirits you choose be assured of the attention and care it has been given.

A “Brewers Mash” of Maris Otter Pale Malt is Triple Distilled to produce this Fine, Smooth Vodka.

Our Single Malt

A unique “Single Malt” Distilled in Darlington using the finest Maris Otter and Scottish peat smoked malts to create a smooth spirit, full of body with a delicate caramel, slightly smokey finish. Each bottle is seasoned with shards of French Oak which will continue to infuse over time.

Our Rum

Paradise Spiced Rum A hand crafted small batch Golden Rum made with pure cane sugar and molasses. Infused with ginger, cinnamon and Madagascan Vanilla before being distilled in a Copper Pot Still and rested in an oak barrel before bottling.
